2001

Growing up across cultures:
↪ Hungary, the Philippines, Spain and Germany.
Four countries, four cultures. That’s where I spent my childhood and teenage years. That’s where I grew up. Every playground looked a little different.
My childhood? A beautiful tangle of different cultures, languages and emotions from around the world. My parents introduced me into two different nationalities into my life — Belgian and German.

2020

I started my training as a chef. Where? On the TUI Cruise ships.
You couldn’t get much closer to the real working world than that, right in the middle of the daily hustle and bustle. Seven days a week, no breaks, no weekends. It was pure hands-on experience.
It was a demanding time that pushed me to my limits. Perseverance and ambition were essential. Was it worth it? Absolutely!
I learnt a lot — but most importantly, I learnt where my limits are and how to push through when things got difficult.

2022

I trained with the renowned pastry chef Paco Torreblanca, named Worlds Best Pastry Chef in 2022 and his son Jacob Torreblanca. Precision and attention to details are essential. Pastry is so more than just a piece of cake. It is art. Art that engages all five senses.

Having worked in fine dining here in Spain, my journey continues into luxury hospitality in Germany.

2023

By chance, I was diagnosed with Type 1 Diabetes. My first reaction: “Wait… what?”. It came as a complete surprise. No symptoms. No warning.

But at first, I saw a much bigger problem: my profession. My passion. I work with sugar, sweet treats and indulgent desserts every day. And now I have diabetes. That’s when I started writing a manifesto to myself.

I started a specialization with the renowned pastry chef Jordi Bordas, World Pastry Champion in 2011, focusing on Healthy Pastry — exploring how classic pastries can be reimagined in a healthier way.

Also I began a state-recognized two years distance learning programme with Ecodemy, a German education provider based in Bonn. Training as a nutrition consultant specializing in vegan nutrition.

2024

My first position as a patissier specialized in healthy, vegan and gluten-free pastry, was at Rosewood Vienna and Rosewood Schloss Fuschl in Austria.
Rosewood Vienna was recognized internationally in 2024, including by Travel + Leisure and Falstaff, while Rosewood Schloss Fuschl received Three MICHELIN Keys in 2024.

During my time at Rosewood Schloss Fuschl, I worked closely with the Asaya Spa, developing healthy, vegan and gluten-free pastry creations tailored to its philosophy and guests.

This experience allowed me to combine high-level pastry techniques with modern dietary requirements — creating refined desserts without compromising on taste, texture or presentation.

2025

At just 23 years old, I took on my first position as Head Pastry Chef at SHA Wellness Clinic in Altea, Spain — an internationally recognized health and wellness destination combining medical expertise, nutrition and holistic wellbeing.

It was a major step in my career and an opportunity to further develop my vision of healthy, conscious pastry within a completely new environment.

Later that summer, my journey took me somewhere very different: to MasQi – the Energy House, a boutique wellness hotel nestled in the Sierra de Mariola, where yoga, meditation, Ayurveda and organic gourmet cuisine come together in a holistic approach to wellbeing.

As the Head Pastry Chef here, I was responsible for establishing and developing the entire pastry concept for MasQi’s new opening in Alicante — from organization and recipe development to production and implementation.
An opportunity to build something from the ground up.

2026

Early 2026, MasQi officially reopened its doors — and with it, the pastry concept I had developed from the ground up became a reality.

A vegan, gluten-free and refined-sugar-free pastry selection was introduced to the guests. The response was overwhelmingly positive. It was incredibly rewarding to see that pastry created with a focus on health could still surprise, inspire and, most importantly, bring people joy.

Summer 2026, I decide to leave MasQi and take the next step in my journey: building my own business.

My goal is to share what I’ve learned through masterclasses, consulting and pastry development. To show how vegan, gluten-free and refined-sugar-free pastry can work without compromising on creativity, texture or indulgence.

Overnight, I was diagnosed with Type 1 Diabetes — like a Kinder Surprise egg. Surprise!
For me, as a pastry chef through and through, this was a problem.
My daily work companion: SUGAR.
Then a 90° change of direction. My new goal:
How can I create pastry without sending my blood sugar through the roof?

What was once a problem has become my milestone — the turning point that set me on the path to Healthy Pastry.
Sweetness, indulgence and health no longer have to contradict each other.
Healthy pastry? Yes, it’s possible!
I’ll explain and show you how, and prove that it can be done.☺

I am

Curious

I’ve been curious ever since I was a child. Back then, it was different cultures and countries that sparked my curiosity.

Today, I bring that same curiosity to my passion for pastry. I’m constantly exploring, developing and creating new recipes.

Minimalist

Minimalist art? I love it. Especially in my creations — whether they’re tartlets or desserts.

Less is more. Less sugar is more. Less sugar means less glucose spikes.

Persistent

The same recipe ten times. Ten times, something goes wrong. The result isn’t quite what I’m looking for yet. I want perfection.

I am persistent. I will keep going until I get it 100% right.

Creative

I love picking up my sketchbook and letting my ideas flow freely.
New sketches. New ideas. New tartlets to design.
I let go and allow myself to be creative — completely in the flow.

Passionate

I came home with a huge smile on my face.
My first day at pastry school is over.
Butterflies in my stomach. I can feel that I’ve discovered my passion. And it feels right.
My whole body is telling me: “Go for it, girl!”

Focused

As a child, I loved watching wildlife documentaries. One scene fascinated me in particular: a fox slowly approaching its prey, completely focused.
To him, nothing else in the world existed except the little rabbit. His eyes never left it. With one precise leap, he catches it.
That’s how I feel when I have a goal in front of me.
(Obviously, my prey is not a fluffy pink rabbit!)
Once I’m focused, I wont’t let go of the idea — or the goal.
